Santoku kitchen knife


The word Santoku bōchō has Japanese historical significance, generally meaning it has the three virtues of slicing, dicing and mincing abilities within. It has a sheep’s foot, or blunt clipped tip (say that 5x fast !)

In the last 20 years, I have gotten some Japanese/Asian inspired designs, and feel it is time I put a page together showing those designs. I do not work with forged Japanese style blue steel, but with high carbon tool steel. It is the kind that is used in the blue steel ‘sandwich’ in some classic Japanese style food knives. It is used in the middle as the cutting edge. I did not and will not ‘copy’ designs, but have adapted them for westerners tastes and uses. Santoku knives generally have the back in line with the handle and are not as long as I make them.
