Top has English walnut wood handle and the bottom has Manzanita. Hankotsu with Walnut wood. The Hankotsu is used for separating meat from bones, but not for cutting through bones.
The blade is 1/16th inch thick and tapers from 1.5" wide at the heel, and is 6.5 inches long.
Can be made out of 3/32nd" stock, as a custom order. The handle is a standard western style handle with red/black double dyed stabilized Box Elder Burl. Hankotsu with English Walnut and double brass bolsters. 3 piece set - middle is Hankotsu.
Wood is very rare Manzanita. Top is a 1" x 4" kitchen knife and bottom is a 12" x 2" scimitar shaped Boning knife.
Top has English walnut wood handle and the bottom has Manzanita.

Double Brass Bolsters with Walnut wood. Extra fancy handle - costs $55 extra over price list cost. Wood is Hickory, then brass spacer, stabilized Amboyna wood, then white/black spaer array. Black white spacr array. This unit has stabilized Box Elder Burl wood. Walnut wood with black/red/black spacer array- each spacer is 1/8" thick. Stabilized Redwood with brass spacer, green dyed stabilized Box Elder Burl, and then white/black spacer array.
