9.5" Kiritsuke with standard Asian style handle and stabilized Maple burl. This beautiful piece is 2.25 inch wide can come in 9", 9.5" and 10" and 10.5" , and is an all purpose kitchen knife the way I make it with a slight French curve rather than the Asian flat edge, which is nearly impossible to maintain in the kitchen. See other handle styles below. 9" x 2" Sujihiki with red spacer and walnut wood handle. 9" Kiritsuke, 2" wide with Asian style handle, brass bolsters. Stabilized Bog oak wood handle. 9" Kiritsuke, 2" wide with Asian style handle, brass bolsters and Canary wood handle This knife design specs came from a client named John Downie, who commissioned me to make him one.
It is a long slender fine slicer, made from the finest tool steel on the market today, 5/64" thick.
The design felt balanced and clean so I felt to include it on this page.
The original design called for 300mm length and 43 mm width, which I am rounding off to 2" wide and 12" long.
Are you ready for a serious Japanese style knife? Well, I think this is it. If it is to long, look at the Kiritsuke. Want a short one, look at the Hankotsu.
