In the last 20 years, I have gotten some Japanese/Asian
inspired designs, and feel it is time I put a page
together showing those designs. I do not work with forged
Japanese style blue steel, but with high carbon tool
steel. It is the kind that is used in the blue steel
�sandwich� in some classic Japanese style food knives. It
is used in the middle as the cutting edge. I did not and
will not 'copy' designs, but have adapted them for
westerners tastes and uses. Santoku knives generally have the
back in line with the handle and are not as long as I make
them. If you want an Asian style handle as seen below,
write me a note with your order.
Santoku Gallery
8" x 2.5" wide Santoku style kitchen knife with hard rock Maple wood handle with stabilized redwood burl insert. A set of kitchen knives. Steel is 1084 1/16th" thick high carbon tool steel.
top: is 8" x 2.5" kitchen knife with double brass bolsters and double 1/4" decorated rivets. The
handle is burled Claro walnut with wax finish, western style handle.
bottom: 3" traditional Paring knife with walnut handle. 7" Santoku with standard Asian style handle, with Rose Wood. All woods shown are stabilized, top 4 knives are fancy and bottom in extra fancy.

Top piece handle has Claro Walnut with double chops, 1/8" thick brass spacer, green dyed stabilized California Buckeye then 1/8" black white spacers, and then a brass bolster with hidden brass rivets.
Bottom has a quilted Hard Rock Maple handle with black/white spacers.
Upgrades have been high speed polished with two grades of wax buff. Santoku style kitchen knife with western style standard handle. 7 inches long, 2.5 inches wide and 1/16th inch thick. The word Santoku has Japanese historical significance meaning 'three virtues', and a Santoku knife wears its name quite proudly, with its marvelous chopping, dicing and mincing abilities. Typically, a Santoku knife ranges in sizes from 5" to 7" in blade lengths but I make them 8", 9" and 10 ".
The handle has a Rose Wood. It can also comes in an Asian style, see an example below. 7" Santoku with Hickory wood with standard western style handle. Orange oil finish.

Extra fancy handle - 7" x 2.5" high carbon tool steel kitchen knife. The blonde handle wood is called Myrtle. Above the Myrtle is steel sheet , 1/2" stabilized Redwood burl insert, white and black spacers and then the brass bolster. Handle has brass 1/8" rivets as well as a company chop in the butt. The chop is a 1/4" tube filled with red dyed epoxy and brass rods and tubes. While the wood insert will vary from piece to piece, one can order this style of handle. E-mail or call me and we can discuss particulars. Other wood inserts I use are Ebony and various dyed stabilized woods. Double Brass Bolsters with a high French polish on . If you want your knives to have double brass just order them as a normal order , and e-mail me of your wish . Cost for double brass is $40 extra per knife Three spacer array, 1/8" thick, with Claro Walnut wood handle. Close up, three spacers, 1/8" thick with Claro Walnut Asian style Hickory wood handle. Asian style with stabilized Amboyna wood handle. Green dyed stabilized Buckeye burl wood with B/R/B 1/8" spacer array. Fancy standard western style handle, with stabilized Box Elder Burl handle wood, with two 1/8" black and white spacer array.
